Today I smoked 21 chicken wings on my MES 30. I used a mix of apple and hickory chips. Two of the five who ate them told me they were the best wings that they ever had. I used a BW3 rub (Desert Heat) on a third of them. And some rub my dad had on the rest. I brushed around half of them with some sauce as well. They were excellent!! I had two pork tenderloins in as well, which took about an hour to cook at 230, and then I bumped it to 275 for about 45 minutes, then through them on the grill to char them up a little because no one likes rubbery skin.
