I almost forgot to post my last smoke. Sorry I didn't get too many pictures. I wanted to do something quick, so I picked up a couple of Cornish hens and a pack of boneless skinless thighs.

The hens were brined for 4 to 5 hours in salt, brown sugar, onion, garlic, etc. Rubbed them with Tony Checherres, you know what I mean. The thighs were marinated overnight in some homemade teriyaki. The hens were delicious with flavorful meat and a light smoky flavor. The chicken teriyaki was sooo good! Need to cut back on the marinade so that the smoke flavor can come out more. They were like chicken teriyaki candy, all glazed and sticky. Mmmmm Mmmmm!

For the sides some brussel sprouts with bacon, toasted almonds, a little soy, and some of the rub. Cooked them on the smoker. I also made some of them salt potatoes. What a fine meal...
