Before I spend money to try and get some casings I thouhgt it might be good to try making some and tasting it before I stuff the stuff. I used the Chicken Chipotle Lime Sausage Recipe from WUTANG. It went over VERY well. Thanks friend. So here goes, the next time I do this I will leave the chicken a little more frozen. The grider working away... and the Test patties... The next step is buy casings and stuff them, then smoke and grill. The question is do you guys cure your sausage befor you smoke them or just smoke and grill. The rest of the batch I made was divied up to friends that tore it up. The test patties were gone in milliseconds. I think they were ok.
