Does anyone know the temperature tolerance for regular cheddar cheese? Will it melt through a FATTY? I'm trying to see if I really need "High Temp Cheese" for smoking recipes. Thanks to all of you for your good answers in the past.
 
More than likely it will so you'll have to pack it tight with very few holes. But, it might taste pretty good oozing through the fatty. Or, you could pack the cheese in something else like fresh Anaheim chilies..Oh yum! Now I'm hungry!
 
Most cheddars will start to melt at 110 degrees. If you put it in the fatty and seal up the edges it might stay put. High temperature cheese melts in a fatty but stays put for the most part. It won't get drippy as easily.
