Hi there. I am Mike, new to smoking, but been wanting to give it a go for a good long time, especially living in NC where BBQ is part of life. Just got the Char Griller Pellet smoker and planning on doing some ribs this weekend with it.
 
Welcome and good luck! As they say, the ribs are done when the meat pulls back from the bone.

Try doing split chicken breasts, bone-side-down, that's a great way to learn your rig.
