  1. Figured everyone forgot about my bday a few weeks ago. Came home to this laying in the bottom of my muddy driveway (Thanks FedEx).

Goodbye ECB group, hello WSM group!

Off to Cabela's to get a new Maverick and start my smoking career anew!

Welcome to the world of bullet smokers!  Life just got a whole lot easier.  All those tricks and techniques you learned with the ECB transfer nicely to the WSM.  Enjoy the new toy!

Good luck with that new WSM! They are great smokers for sure. We will miss you in the ECB Group ( LOL) You are still welcome to come by and listen to us complain!

  4. Thank you! I feel like a proud new parent. I'll miss the old ECB. We made some good food together, sometimes we even made it on purpose...

and don't be to hasty to toss the old ECB, pass it on to the next person that needs to learn. Or sell it to off-set your birthday present, lol.

  6. Oh... don't worry that old ECB isn't retiring that easily. I spent a lot of time and drank a lot of beer making sure that thing cooked good. It still has a place in the stable!

There you go. I just pictured here in an old dusty cobwebbed corner of the garage or shed... all alone... discarded like an old rake with a broken handle...

  8. That would be an improvement lol! Right now it sits alongside the house next to the garbage cans... hahahaha

  9. And we're off...

    Opening the box

Getting further into the box... I can smell the TBS already

The inspector giving her stamp of approval.

    Who needs the instructions?

    Success!

I rarely get excited about any gift but I have to say the wife hit a home run with this one!

I'm off to the butcher shop for some chicken parts to season her up!

You better keep the guard dog on duty or someone is liable to run off with that baby. Keep it coming, very nice.

It struck me when I read this, being new to smoking, when it does turn out good I'm surprised, even though I shouldn't be because I try to follow the advice from this forum. It's just funny when you said, "sometimes we even made it on purpose..." because I can sometimes make a mess of it, and then, next time, it's "good...on purpose..." Made me LMAO[IMG]

You will really enjoy the WSM.....It's the best bullet on the market.....and the BBQ it produces is second to none.

Nice score, wish I got gifts like that one... I am sure you will smoke some great stuff with that baby - what you going to call her??

A full smoker is a happy smoker

  14. This is by far the best gift I've gotten in years. Last year I got a metal garbage can to keep my birdseed in...

For once I think the wife finally heard something I said?

  15. As an added bonus, I happened upon this. I haven't driven my diesel in weeks. I popped the door open and saw 80# of KB I forgot I bought on sale...

  16. I've made a lot of "misses" but here and there I hit a home run. It's just patience, which I have none of, and practice...

When the wife said the ribs were good and then ate a whole rack, I knew I did something right.

  17. I was actually saving up my Cabela's points to buy a WSM. Had about $250 saved up. I guess I'll use it on something else.... like maybe a new rifle to knock this one down. Caught him on the trail cam recently.

PS. No offense BearCarver if it's a relative. Lol

  19. He's a big boy. Looking at the tracks, I figure he's about 350-375#.

I've thought about smoked bear. Has anyone tried it? Our gun club has a bear roast every year after the season wraps up. I think it tastes terrible. Way too gamey for me and I eat pretty much anything.

  20. It's been about 3.5 hours since I dumped in about 3/4 of a chimney of KB. It hasn't varied more than 5° the entire time. I think I can get used to this! Although I will need a new excuse to walk outside for a beer...

This is with all vents wide open. Trying to get a baseline on how much charcoal to use. When I graphed my old ECB temps it looked like a sine wave. This thing is like a dead person's EKG! Flatline!!!!
