The daughter of a friend of ours LOVES the way I cook chicken breasts. So, over the weekend I brined a few for her, 34 to be exact! She's going to school full time and has a little job on the side for spending money, so the wife and I figured she could use a little freezer assistance and made these. This isn't all of them, only about 1/3 of what we cooked. I used Pop's brine for these and let them sit in the solution for 2.5 days. Soaked in fresh water for 45 minutes, dried them off, brushed with EVOO, then seasoned with my Italian blend, garlic powder, and onion powder. Cooked them (grill with my Amazen) until they hit 160 IT, let them cool a bit and then vacuum packed. I initially had 36 breasts, but 2 kind of disappeared! The 34 that made it are in the freezer now and we will be meeting the young lady for dinner tomorrow night and will take them to her. It's a surprise for her. Oh, for those that don't know, reheating these breasts will be VERY easy for a busy college kid. Drop the unopened bag into a pot of tap water, turn the burner on the stove to high, let the water come to a boil, wait 2 minutes after the boil has begun, remove from the water, cut the bag open, and enjoy! Smells and tastes almost like it just came off the pit!
