A good friend was recently diagnosed with lymphoma. This weekend there is a benefit for him so I decided to whip up a load of PP.

41 pounds of butt

Butts rubbed down with a heavy coating of the magic spices


That's it for tonight, into the fridge for a nice nap with the beer, wine, and smoked cheese...

A full and I mean FULL ring of KBB. It's only about 40° here today and the wind is howling. November is definitely here



Great new technique for cleaning the caked up grease on your grate brush. Just rest it on top of your chimney while it's heating up

Last QVIEW before what will hopefully be about an 18-20 hour nap for these


Since the wind is relentless I had to employ the welding blanket trick. The temps rebounded slowly when I put the lid back on and have stabilized right around 230° now with one vent open, one closed, and the 3rd about 1/2 way. Top vent wide open


Stay tuned the chili cooking is coming up later this afternoon.

Interesting progress on the meat thus far... I decided to put the probe into one of the butts as I settled into watch the truck race tonight. 180° at 10:30. Cooking a bit faster than I had thought they would. Hoping for a stall so I can get some sleep tonight.
 
You mean you're not awake at 4:15am? When the meat says it's done, it's done.


The butts all probed between 204-209 on the Thermapen. The last one completely feel apart as I pulled it to wrap.


Ever faithful, she was a few minutes behind me out the door, but made it in time to get a few pieces that stuck to the grates. It tastes incredible!


Everything wrapped and in the cooler for a rest. The timing couldn't have worked better. I need to deliver the food by 11:30 so it'll have plenty of time for a nice rest.
