Howdy neighbor. After smoking. On the first ones I only smoked them to 145 degrees internal then sliced and fried or baked as needed.
 
Neighbor, I only keep them in the fridge for 5 days. Anything longer than that, I wrap and freeze.
It's just the way I do it...

OR you could just send it to me for safe keeping.

If you have a proper cure, a good smoke, and a clean fridge.

You can get a good week to 10 days, My Cappicola CB started getting a little sticky stinky after that, I am a fool though and ate it any ways, it's was all good!
