Buy spares and trim yourself or buy St. Louis style?

    I prefer buying spare ribs and doing my own trimming, rather than buying the St. Louis ribs already trimmed.  The local HEB (Texas grocery chain) always has both and you pay more for the St. Louis.  I don't mind the extra effort of trimming them myself, and then I have those trimmings I either smoke with the ribs or vacuum seal for using with beans, etc..  The trimmings off of the spare when I square them up are good with eggs and biscuits on a Sunday morning, or use the smoked ones reheated with some fried potatoes and onions.

    Do you folks buy spares and trim your self?

    For me it all comes down to the price. Every now and then Publix will have St. Louis style on sale for cheaper than spare ribs so I will get those. Otherwise I get spare ribs and either leave them alone or trim them myself.

    I have to throw my 2 cents in - I agree with bmaddox.
    I usually get the full rack and trim  them myself (smoke those extras at the same time and then use the pieces in some smokey beans).

    Sometimes Costco or BJs has St. Louis cut spare ribs on sale and I grab some.

    Remember that the extra meat you are cutting off is almost all meat - little bone, so you are getting a great return on your investment....!!!!

    COOK SNACKS!  That's what I call the trimmings that seem to get done faster than the racks!  

    Also, like above, the smoked trimmings are great in beans.

    I buy my ribs from a distributor, so they are always vac packed and full spares.
