Butt........... what should I do ???

  1. I've been cruising through the forum today as I plan to purchase and smoke a butt this weekend... i'm somewhat conflicted as to whether I should brine, rub, or inject !!  Any suggestions??????????

    For your first one I would rub it and let overnight. I inject mine in the cryovac so it also gets brined, but thats just me. I smoke mine til 160* foil with some liquid and take it to 200* and let it rest for at least an hour before pulling it.

    I have not injected one yet but I do rub and let it sit overnite in the fridge and rub again just before the smoker. I go to 160-165 range then foil and pull 200-205 wrap in towels then into an empty ice chest for anywhere from 1-6 hours to rest.

    I like meateaters advice, the one thing i would mention is your cook time.

    Remember the 1½ hr per lb. You may want to start with a small butt, unless you want a 12-16hr smoke.

    I agree with just rubbing the night before then a little rub day of the smoke. I don't foil though (love a lot of bark). Get the basic flavor and cook down pat then start experimenting with injections etc. to find your signature flavor. Good luck and don't forget the Q-View!
