OK, so this is my first post AK vacation smoke, about an 8-9 lb pork shoulder blade roast, or butt, on my ECB, which actually held great temps today. Smoked for 6 or so hours before foiling, then about two more before I hit ideal temps and tossed it in the cooler in a towel for 90 minutes. It pulled apart beautifully. This was the best pulled pork I ever did with plenty of moisture, good smoke flavor, nice smoke ring etc. I am looking forward to the left overs. As a bonus, I add a bear-view grizzly I saw in Denali NP a couple of weeks ago on my vacation. If you haven't been to AK, it's worth it to go. Happy Sunday! Pac.
