Building big smoker

    Hey everyone. I joined here to hopefully get some advise about my build. My objective is as follows:

    Smoker needs to be completely versatile. Cold smoke and hot smoke capable. It needs to be big as my family does 700 to 1400 lbs of venison sausage every year so it has to hold a lot of meat. Smoker needs to be relatively easy to use. I am not afraid to spend a few bucks on proper components and controls no sure where to get. I live in Alberta, canada.

    Here are the materials I have to work with so far:

    Walk-in style cooler box insulated sandwich panels. I plan to build the main box with this material. Size will be approximately 60" long 47" high 36 inches wide(deep). I have an old BBQ that works good and was thinking of attaching to main box as a smoke generator. I have a 120v fan/heat coil into to provide heated circulation. I think I want to use 220 oven element but not sure how to acquire and wire all the controls needed and don't know if it will provide enough heat to get to desired hot temps 325F.

    I will post more on my ideas including sketches when I get a chance. Look forward to the advice from here.

    Welcome, from southern Ohio, to the best forum on the internet if you are looking to learn how to BBQ/smoke/brine/cure/inject. Well you get the picture if you can do it to to something you put on a plate to eat then someone here has probably done it. Use the search bar at the top of the page and you will be led to the answer to most every question you can think of. If you don't find the answer there then just post it and someone will chime in with there opinion on the subject.

  4. Glad you joined the group. The search bar at the top of any page is your best friend.
    About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
    and the list goes on has probably been posted. Remember to post a QVIEW of your smokes.
    We are all smoke junkies here and we have to get our fix. If you have questions
    Post it and you will probably get 10 replies with 11 different answers. That is
    because their are so many different ways to make great Q...
