Building a smoker. Ideas and advice

  1. I'm a 27 year old Aussie male. I'm a 4th year apprentice boilermaker, I finish my trade in January next year.

    I'm not much of a cook of any sort but when i do cook I prefer bbq's. I've just got a 6 burner gas bbq at the moment but I've been looking at some smokers and I'm keen to build my own. I thought it might be a good project that I could use for years to come and feed the family at the same time.

    I'm thinking of building a water smoker. Any advice on where to start planning the build. As in any recommendations into what type of steel to use? Mild steel would be the easiest for me to use but I'm a little concerned with rusting on the inside of the bbq. Out side I'm not worried about as it will be painted. Also how thick of steel wild be recommended to use? 3mm thick be enough of would I have to go bigger? 6mm?

    Also what would be a decent size to build? I am basically after the more experienced guys to push me in the right direction, building it shouldn't be a problem for me at all as I know what I am capable of, but I want to make sure I build something that's going to work. If that makes sense.
