brisket

  1. Have two flats in the smoker started at 8 am it is now 1 pm thought it would be ready to foil. It is 140 right now hope it will be done soon
     
  2. Grabbed a 4lb flat today too!  Got it rubbed and chilling in the fridge gonna start mine tonight for an evening smoke...good luck with yours
     
  3. good luck witk your to just wrapped mine,hopefully done by dinner

    That's 5 hours to 140, your pushing the limit if you probed or injected it at the start.
