I started bright and early yesterday morning. This is my second smoke on my file cabinet smoker. I am really getting the feel for adjustments needing to be made as I smoke. As far as temperature. I have my bottom rack cooking at about 350° which is good for my chicken. My second rack cooks at 225-250°, and my top rack cooks at about 210-220°. During the cooking process I ran out of propane, this was a headache, by that time everything was finished except the brisket. When I put it in the oven it was about 164° and when I pulled it out it was 194° Next time I will let it cook until about 200° I would have liked it a little more tender.
