Brisket/Ribs/ABT/Chicken/ Qview Yesterdays Smoke

    I started bright and early yesterday morning. This is my second smoke on my file cabinet smoker. I am really getting the feel for adjustments needing to be made as I smoke. As far as temperature. I have my bottom rack cooking at about 350° which is good for my chicken. My second rack cooks at 225-250°, and my top rack cooks at about 210-220°. During the cooking process I ran out of propane, this was a headache, by that time everything was finished except the brisket. When I put it in the oven it was about 164° and when I pulled it out it was 194° Next time I will let it cook until about 200° I would have liked it a little more tender.

    Looks like you mastered the point and flat separation on your brisket, congratulations on that too.

    Thanks everyone. Sorry I was not able to respond in a timely manner, I got a little caught up this weekend.

    My sister lives in Shepherd Texas and she told me she had a little cast iron off set pit for me. So I got a long time friend to take me out there to pick it up.

    While there I seen an old Weber grill sitting under a tree, the bottom had a couple of rusty holes around the legs, but the top was in pretty good condition. I ask her what she was going to do with it and she said I don't use that old thing, so I grabbed it to use on an ugly drum smoker that I am getting ready to put together.

    This turned out to be a great little ride. Shepherd is about 45 minutes from me.

    Nice smoke!!!!!

    Sounds like your cabinet smoker has nearly ideal rack temps for a combo smoke. All my verticals run cooler on the lowest rack positions...yours is right on the money. Your getting a good arsenal of smokers put together as well.

    Enjoy the ride! You will find yourself going places with food that you never knew existed before. Have fun and great smokes to ya!
