Brisket question

    I've got a brisket on the smoker right now that looks like it's going to be done a few hours before I planned. How long can I leave it in the cooler without having any issues? Thanks!
     
  2. I'd say 4 or 5 hours......You can always lower the heat to slow it down.

    I'm only at 220 now. Will it dry out a lot if I drop it and cook longer?

    What's the IT of the brisket??
     
  5. you can foil it and drop the temp to 195 if you need more time. You will loose some bark. But you would loose it anyway holding it in the foil.
