Brisket Flat your thoughts

    I done a 11lb brisket flat today. Fired the offset up at 6:00am


    Temp about @ 160 IT


    Pulled and ready to rest


    Sliced - bend test


    What are your thoughts?

    That brisket looks fantastic!

    I did have the brisket wrapped in butcher paper.
