I have just started smoking and I use the 22.5 Weber Kettle. Been very pleased with my boston butts and want to try a brisket. For a butt I use my charcoal dividers and place the butt in the middle. I was thinking about trying a minion method of sorts. Any suggestions? How long will it take me? How about a good rub or marinade?

I like a "dalmation rub" (salt, pepper, garlic powder, onion powder) on brisket.  I've heard of guys injecting beef broth, rubbing with "better than bullion" and other techniques but I keep it simple.

I've used the kettle to do brisket by putting the coals on one side and the meat on the other.  I placed a water pan under the brisket.  I don't do a full packer or anything but a nice flat is great.  Anything larger goes on the WSM.

I read your post on the butt and using the dividers... Myself I use the minion method on the kettle... Pile all your unlit coal to one side with chunks of your flavor of wood mixed all through the charcoal (put your catch pan to one side)... leave a little place at the end of the coals to dump about 10 lit coals in (and then I only get the lit going about half or so when I dump em in).... run vents wide open until you get close to your temp (225`) then close down the intake to about 1/4 open and go from there... give it about 10-15 minutes to settle after closing down the vent... I actually cook mine hotter (between 275` and 300`) and wrap at 165`.... I made sure I had enough unlit coals to last the cook (in other words, load it up)... If the meat gets done and still coal left just close everything down.. it will go out and save any remaining coal...

Good luck

The rub sounds good. I saw the method you described on youtube. Looks pretty easy.  Would you go with a 4/5 lb flat?

Something you may like to look at would be the smokenator. You can do a seach for it to locate. I have had mine for 2-3 yrs now and use it religously on butts and ribs. The smokenator comes with a grill the sits atop your regular grill and also comes with a water pan and divider to keep your coals seperate. It's hard for me to explain..........so do a search.....it's worth every penny.

I have read a lot of reviews on the smokenator. For $60.00 seems like a great way to get a smoker for a reasonable cost. I may ask wife for one for Christmas. Glad to hear it works.
