Brinkman Mods?

    Guys I was hoping that you might give me some suggestions on some mods that I could make to my Brinkman Gourmet. I have done three smokes in it now and am finding that my charcoal pan is getting full of ash and choking off my air flow and I have a hard time holding heat, and when it goes it really goes. These smokers have no vent control at all and if its possible I wouldn't mind adding some type of vent control to it if possible.

    He talks about modifying the feet, but I wouldn't bother unless your have a problem like he describes. Some folks add an adjustable vent in the lid. You don't need it for smoking. The lid fits loose on purpose to allow airflow. However, if you GRILL and use the lid on the grill, a vent may be okay. The lid fits on the coal pan much tighter than it does on the cylinder. And I found my coals would start to suffocate on a long grill. But then, setting the lid down a little ajar was all I needed to do.

    If you want to use it as a waist high grill, you won't be able to make any type of damper over the breathing hole in the outter pan. I read on the web, and also here, where someone sealed off the 2 inch hole in the bottom of the outter pan, and then added adjustable vents on either side of the outter pan. I intend to do that someday, but the smoker is running pretty good right now, so I don't feel like futzing with it.
