Brining time for turkey breast???

    Gonna try my first breast this weekend. Turkey breast, that is. [​IMG]

    I'm figuring 6-8 hours overnight in a weak brine for 6-7 pound breast, then 30-40 mins/pound at about 250 degrees.

    Sound about right to y'all?
