My husband and I plan to hunt down our first wild boar and cook em in the ground. I could use some pointers, such as the brine, what works best? How long do I brine a smaller boar for ? I hear the younger ones taste better than the larger ones. Any info you could share with me would be appreciated.

First off welcome To SMF there Cheryl. Now it sounds pretty cool that you and the hubby want to track down the a wild pig and smoke it too. WOW that sounds like alot of fun to. Now I have never caught a pig but I have alot of friends that do. I have smoked a smaller pig a couple of times and I don't brine then maybe inject them but I'm not sure that it will do much either. I'm sure that someone else that has smoked/cooked a pig oin the ground will come along soon. So if you will please take alot of Qview (pictures) for us here. After all were crazy about that stuff.

I have smoked a small pig and just used the same rub that i use on all pork..

If you want to brine it  Tips poultry brine works good on pork also.

Or if ya don't want that maybe a buttermilk /cayanne pepper brine.
