Hi folks. Rich here.

I got a Brinkmann, but she's being sold. I need to post here about that unit.

I also have a WSM 18. Great unit, got a bit hot yesterday though at about 300'F.

Grillin turkeys is what I want to do. Love to get your insight. Turkey means family times to me. I'd love to take the time to do a good sized turkey for friends, as I lost my family. Love to get your advice on a serious meal like a turkey.

Well done. I did a couple chickens similarly to that. Butterfly, but no bacon. I smoked over peat.
 
First off welcome to SMF. Your gonna like it here cause there are alot of good folks here that would just love to help you with just about anything to do with smokin. Next I think you should look up the E-course it's free and very informative and it will show you the basics of smoking. Then check this out
