Just put my first fatty on. Hoping to have everything done by gametime. Got some teriyaki wings I'm going to smoke for an hour then finish on the grill. Also got a couple nice crabcakes. I'll post pics of the fatty later. Fatty recipe: Rolled out 1 chub of pork sausage from a local butchery. Sauteed vidalia onion,3 garlic cloves and about a cup of sliced baby portabella mushrooms in a third of a stick of butter. let cool slightly. Dusted the flat fatty with rib rub before stuffing. Stuffed with the onion,garlic, mushroom mixture and a four cheese blend (mozzarella, smoked provolone, asiago and romano) Rolled up and wrapped in hickory smoked bacon and dusted with a little more rib rub. Can't wait to try it. GO PATS !!!
