Breakfast sausage losing flavor

Been making breakfast sausage for quite some time with excellent results, grinding pork butts and using Sausage Maker breakfast sausage spice mix, then vacuum sealing and placing in the freezer. Worked so well, last batch, we decided to go large, and not have to make it so often. Sausage was very good for 3-4 months, then seemed to have lost its spice. Fries up nicely, but tastes like ground pork, not sausage. We always add extra sage and red pepper flakes. Any body else ever experience this flavor loss? Does the spice mix lose it's flavor after extended freezer time? Did we just not add enough seasoning?
 
An additional thought to CJ's question about thorough mixing..........I add my spice mix to the meat and mix good just before I grind the sausage. Works for me.
 
I've also noted that sage seems to fade with time in the freezer.  So far, either using it more often or jacking up the sage seems to help.

 I agree that after 3-4 months that sausage loves a lot of flavor so I try  not make up too much at once
 
Once vacuum packed and frozen havnt had any issues.
But i have left it in the firdge after thawing it to long and it loose flavor.
