Bourbon Slim Jims

    Since i have like a case of Rebel Yell i will go this way with the slim jims. Going to mix, stuff, smoke tomorrow.

    7 Tbs of my mix, 1 tsp cure #1 and 1 cup RY. This is for a 5 lb batch

    Yup a case. RY is like my backup to JD which is my backup to Makers [​IMG]

    Added some buckwheat flour to the mix. This should mellow the bourbon and cut down on some shrinkage.

    Freaking hayseed market only had 73/27 GB. My norm is 80/20. RY slim jim mix ready to stuff

    Used my KC water stuffer, took like 4 mins cuz the tube i used is 1/2" and the length of collagen would not fit so i had to reload the stuffer tube 2x

    Hanging no smoke for about an hour. Then i will hit the sticks with hickory smoke for 3 hours at 140.

    I like your sticks and those collagen casings are a B****h to work with for me too. Now I will be willing to try yours. I have to made some for the wife about 15lbs at a time.

    Tired of the nasty 73/27 GB. Hate the cavitation and excess fat in the meat so i'm sure there will be some i will cut off. Next time go to my normal grind.

    Ahhhh i hate that grind.

    The casings arent the problem for me. Its the 1/2 OD tube that wont go through the entire length of casing so i gotta pull the casing on the tube. Next time i will use the 7/16 or 3/8 tube. Is that a smoke vault i see glowing.

    When i worked at Cabelas in the camping dept i bought one for $80 after my discount. Used it 3 times and a friend said hey i will give you $200 for it....SURE

    I'm waiting for the final pics too.

    This week (in Macungie) we have 73/27 for $2.29, and 80/20 for $2.49. I just got 25 pounds of the 80/20 today---hoping to smoke on Saturday.

    Did i mention that i hate 73/27 GB...Arhhhhh

    Blooming now. I rekon i will be cutting some sections of them out because of the lousy.....well you know.

    I cut off and tossed just about 3/4 lb from the lousy 27% fat cavitation in the sticks.

    Next time get somebody with a better arm, and toss them SouthEast of your house, and a bit farther !!!!!
