Boston Butts in the ground...suggestions

  1. Hey guys and gals,

    I know this isn't technically smoking meat, but it has to do with indirect heat and meat.  I'm going to attempt to cook two boston butts in the ground and was looking for some suggestions.  I've read a bit and watched a few videos on how to do it with pigs but haven't found too much on how to do this with smaller meats.  Has anyone tried this before?  I was hoping to use charcoal or lump coal instead of using a TON of firewood, but if firewood is the way to go than thats the way I will do it.  Any links, tips or tricks would be greatly appreciated.

    did some last year and used a puerco pilbil recipe with bananna leaves. was very good. google the recipe or I will see if I can dig it up. there is a youtube video of the hollywood director that did the spy kids movies and his recipe. that is what I used. try it. he did his in the oven but hey I had to try it in the ground. 
  3. It looks awsome...How did you do it in the ground?  Did you do it in the ground for 4 hours like the video said?  You've got me convinced that I want to do this dish but, I need more on how to do it in the ground...thanks

    My Dad used to have Earth Roasts at the Farm every year.  I don't know what they did...but it sure did taste great! I do think they wrapped the butts with Banana leaves tho.  Remember huge green leaves around the packages of meat.
