Boneless Boston Butt first try question

  1. I have a 5.5 pound boneless Boston butt and had a couple questions for you guys. I have it on the smoker now it's been there for 2 hours at roughly 250 degrees. The current internal temp is reading at 125 which seems high to me but is it? I'm starting to get a bit nervous.

    Sit back relax and have a beer, (it's noon somewhere) there is a stall ahead. 225 is the preferred temp for long smokes like butts but plenty of folks speed things up by running a little hotter, I've done it. You'll be fine butts are very forgiving. Don't forget pics!

    No worries. Its ok. It will jump quick then level out and go thru its stall period.
     
  4. Ok we're 5 hours in and the temp is sitting at 173 degrees. I got the smoker down to about 225 now and have had the butt foiled since 165 degrees.

    I'm still a little new so pics may be hard to get up but I'll try to snap a few of the finished products. The ABT's go on in a couple hours and I can't wait to tear into some of them!

    I was going to say to kick back and it will even out soon enough. Now that it has seddled down you have sometime left to do many things like the Abt's and the whole picture/ Qview thingy. Now go look up posting Qview in the wiki section so we can see your butt.......LOL
