I wasn't able to find a good answer on this. What temp do you guys cook your boneless beef ribs to? I have them on the Brinkman smoker right now. I believe they are boneless country style ribs. They have been at 225-250 for about 1 1/2 hours currently. Thanks!

I have never seen them but I like beef ribs medium aka 140*F IT. You could cook like Brisket 190* to slice, 200*+ to pull...JJ

Well I smoked them to 170 and then put them in the cooler for 30 minutes. They were rock hard and hard to eat. I have no idea what happened.
