Bologna and Stuffed loin Questions

    What temp do you want to cook the bologna to, and do you want to season it with anything?

    When you roll the loin back up what kind of string do you use? I have cotton twine is that ok?

    I like to season the bologna.... here is the last one I did....http://www.smokingmeatforums.com/for...ad.php?t=13220
    I covered it with bacon, so I mainly went for crispy bacon instead of an internal bologna temp.


    On a loin, I use butcher's twine, so your cotton twine should work just fine. Take lots of pictures for us.[​IMG]

    dont know about the bologna, I have'nt tried that. but your cotton will be just fine, stay away from anything that has nylon in it. as for as your loin, just have fun with what you put in it, here is a link to he one that I made last weekend.

    Thanks guys I saw that krusher it was one of the few inspirations I saw last week that made me have to try one of these.
