Anyone ever try a sausage like this? Texas Sausage. Got this recipe out of the Legends of Texas BBQ cookbook. Looks like it is pretty easy and would be good. Might have to give it a run. 6 pounds beef rump roast or beef trimmings 4 pounds fatty Boston Butt 1/4 Cup Salt 3 TBSP Coarse Black Pepper Medium Hog Casings Coarsely grind the beef rump and pork butt through the 1/4 inch plate of a meat grinder. In a large bowl, mix the ground meat with the salt and pepper. Knead the mixture with your hands until everything is well blended. Stuff into casings. Tie into 4 to 6 inch links.
