Im in the middle of curing my first batches of pork. I had added these St louis trim into the cure, pulled them yesterday and smoked with apple and oak. The smell of these things was fantastic and the flavor they imparted to these beans was unequaled by any store bought ham hock I ever knew. Small beans I know but I like this qview stuff.







start small.
 
Looks great, I like to pour a small amount of sweet pickle relish juice on my black-eyed peas. Yummy!

Thanks guys, yea the eatin was fine, never had a better bowl a beans. Im gonna smoke a mess of turkey necks to use in soups at work. Geez I cant imagine what this stuffll do to a bowl of chowder, eye yi yi.

I have been known to toss smoked turkey legs in with a pot of beans. I don't know what makes what better. The turkey smoke going to the beans or the bean juice going to the turkey. I also have to admit that I don't just use meat for the flavor with my beans or greens, if I am doing up a pot I usually add a nice ham steak cut up into cubes too.



Man alive! I wish that I had a great big ole pot of something going right about now! This site is not the place to come to when I am hungry.
 
Black eyed peas are one of my favorites.....and that really looks good!! Usually I eat mine with a little dab of mayo on them....now that's good!
