Picked up nice ribeyes last Friday, I have been thinking about blackened steaks lately, and thought I would give these a try. Used Tones Cajun seasoning as a blackening rub. Put in the smoker for 45mins with apple and cherry, then onto a smokin hot buttered pan. Need to do this outside because it really smokes! Didn’t get any cut pics, and it came out medium well, a little more done that I wanted. I need get a better thermometer, just ordered one today. The steaks were mighty tasty and a great Saturday dinner. I am upgrading my blackening pan to a Griswold cast iron, should arrive in a few days to continue on the blackening quest. I love blackened!
