I am smoking a brisket for my son's 9th birthday tomorrow. The party is at noon (thanks honey) so I had to start it tonight. I will smoke it 3 to 4 hours then put it in the oven on about 230 for the night. Hopefully it will be done about 10 in the morning. All ready to go. In goes the brisket (put rub on it 24 hours ago and injected it). A fatty which I'll smoke in the morning (filled with pepperoni, diced tomatoes, and mozzarella). And for fun, about 100 water grandades for the kids (and me).
