We have kind of a tradition going with birthday's and such.  I smoke and the family all arrives in mass.  This year for my son's 4th birthday, I smoked 5 racks of baby backs, Brisket, Hot dogs, and ABT's.  The brisket I smoked on Thursday, and wrapped in foil to rest in the fridge until about the last hour of today's smoke.  I threw it up on the top shelf to heat up while the ribs were finishing off a 2 - 2 - 1  timeframe.  The ribs were a basic brown sugar, paprika, and salt base rub, and were finished off with my honey chipotle bbq sauce.  ABT's were stuffed with little smokies and cream cheese.  Wife bought the Jap's a little big and they were falling out of the rack by the time they were done, but they were awesome as well.  Hot dogs were well..  Hot dogs :)   The cut pic of the ribs was all that was left by the time I transitioned from cutting the meat and getting to my camera LOL.  Always get a great amount of staisfaction when food dissapears that fast.  :)

Hey Fourthwind,I had the same issue with buying peppers that were too big or too small. While ordering a Chile Grill for a friend I saw this accessory for $2. It's a Gage you can take to the store with you to make sure you get the perfect size pepper. I would assume the Chile Grill and your rack have holes about the same size. http://www.chilegrill.com/Accessories/

The Q looks great.

Now that's the way to celebrate a Birhtday. So Happy Birthday to your son and I can only wish it was my birthday and I was there in Mass. Great job on the whole dinner.
