Big butts

    I've got two 8 lb butts in the smoker now. Smoking with apple and a bit of hickory. Rubbed with evoo and my rub. Planning on keeping smoker at about 250.

    Great looking cuts of meet Dawn. Hope yo can stay awake, sometimes it becomes a long haul. But then again, you know that. Good luck lady.

    Butts are now at 154 and 157 and looking good if I do say so myself. I'm expecting the stall any time now, it'll be nap time when it happens, lol.

    those look good dawn,

    I have been doing my last few butts @ 240-250, and have been happy with the results.

    Also since I broke my probe a few months ago I have been going by feel, & just start taking a temp around the 10 hour mark with an instant read thermo on the butts.

    Butts are now foiled. The larger one was 165 and the smaller one was 169. Flipped them as I put them in the foil.

    They're still chugging along. One is at 190 the other is 195. [​IMG]

    Finally done. Took about 12 hours till in the cooler. I let them sit for a couple of hours and then pulled. Those babies were still steaming.
