Big Bald BBQ on chicken

    this is my first smoke of a couple of chickens, I did last week

    I used the big bald bbq rub. it was moist and the flavor was pretty good.  

    don't look at the sausage they burnt,  

    I need to learn to check on it more often, I was afraid the smoke would escape.

    live and learn i guess

    Next try out.....mmmmm maybe pulled pork, or baby back ribs

    My smoker was dripping grease everywhere ,   I'm stuck finding a way to clean the concrete.

    The birds look good, OUCH on them sausages. What were they? If still around and not bitter, they can be used to flavor Greens, Beans or other dishes that benefit from smoky Pork...JJ
