Best woods for smoking pork shoulders?

  1. Smoking a pork shoulder tomorrow morning and was just curious what the best wood/woods are to use?

    I like to use straight hickory. Care must be taken so as to not oversmoke.

    However, using the choices provided, I would use apple and hickory.

    All are good choices. Hickory you might be careful with, it could get powerful.

    I use a combo of Oak and pecan for just about everything. I like the flavor, so I stick with it.
     
  5. I use oak for just about everything. Living in the Sierra foothills, it is the best that is readily available
