Best way to cook chicken

I am not sure where I discovered this but the best way that I have found to cook chicken is to put it directly over the heat for a few moments. This will sear it and seal in the juices.

Next place the chicken over an unheat part of the grill (indirect grilling) for 10 minutes per side. After the 20 minutes are up I place back on the direct heated part and crisp it.

You will have some of the most tender moist chicken ever
 
Cheech, I take it you are doing chicken pieces. Will the smoke get to them on the 'cool' part of your grill. Must do I suppose. Anyway all interesting.

I have been doing all my chickens in the Webber but seeing that I have a full loin of pork to smoke I will put a couple of chickens in the refrigerator smoker and see how they go. That wont be until later in the week as I have the cure to do yet.

Am doing that Samson fish tomorrow too. Fingers crossed as it is not for us, but for a mate down near the beach.
