Hi all I'm moving to the UK in a few months time and am keen to set up a BBQ / catering gig. Just weekends for now serving at private functions, weekend fairs / markets that kind of thing. I'm have difficulty deciding which type of smoker to head towards. I like lang 84, but have some concerns over cheap wood supply and the attention they need to maintain temp as I will be cooking overnight for markets the next day. I've looked at cabinet style like the backwoods and humphrys and the pellet options like the yoder ys 1500. Any suggestions hints would be most welcomed. Cheers Clint
