Hi Guys & Gals, Just got a MES 30 about 3 weeks ago so obviously very new to the smoking. I received the smoker on Friday and Saturday was smoking St Louis Ribs and Pork Tenderloin. They turned out OK but showed that I have a lot to learn. My friends on the other hand said they were pretty good but then they are my friends. The following Saturday I smoked Beer Can Chicken following Jeff Phillips recipe from his Smoking Meat Recipe Book. That is where I got a lot of rave reviews from my friends and I must say that was the best chicken I ever had and that is saying a lot because I am starting to get up in age at 72 but still have a lot of smoking miles left. I had not know about "Brine the Chicken" "Rub the Chicken" or shoving a beer can up a chicken butt. It sure did the trick so good that I repeated the process all over again this last week end only instead of beer this time I used Cranberry Juice in the beer cans after I drank the beer. That chicken came out so juicy, so good, so tasty but then I am not telling you guys & gals something you don't know, you folks have being doing this a lot more than me, I am just trying to catch up.

Thanks Gary, I have a lot to learn about smoking however, with help from others such as your self you all can keep me informed on "The How Too's" to do a variety of smoking. Going out to Vegas for a week in the morning but when I come back I will be asking a lot of questions and doing a lot of smoking.
