Realized I forgot to post my Easter ham. The ham was a partialy cooked "Cooks" brand from my local mart. I scored the fat, coated it with yellow mustard, and gave it a generous rub down with my rub mix. Once I got down the the last hour and a half I started glazing the hame, Costco has a Mango Ginger Habanero glaze that is really good. I thinned the glaze down with some spiced rum and glazed it once every half hour for the last hour and a half.
The ham was joined by some sweet potato's, and a mix of asparagus and mushrooms. For the taters, I added spiced rum, maple syrup, salt, pepper, brown sugar, and butter. Smoked the taters uncovered for 3 hrs, stirring occasionaly to make sure they all got some time in the juices at the bottom of the pan. The veg was just a little olive oil, salt, and pepper.
