My kids decided that Dad needed a smoker. (I actually think that DW gave them the idea 'cuz she loves BBQ.) Anyway with the gift card, I got the 30" MES w/window and meat probe and am ready to go. Asked DW what she wanted to try first and she suggested brisket. Sooo.... Gonna season it tonight and try a brisket tomorrow...Have read mucho threads, so I am just dangerous. Any surefire ideas to make me a hero? So I know 225-250 to about 190. Apple juice mop and in the water tray. Gonna rub with a bunch of stuff in the cupboard. Mustard?
