Howdy all, Since February I’ve been in 6 different states, had pneumonia, and some neck surgery done…  Needless to say, I haven’t been able to cook, much less get online hardly at all.  I apologize to those that I missed PMs from, and will reply, albeit a bit late.

For those that know me this will be quite a shock; this last week when I told my bride that I was going to cook for the 4[sup]th[/sup], she informed me that I need to get back into it ASAP because we ARE COMPLETELY OUT OF SAUSAGE!  Now, around my house, that’s like Arnold Schwarzenegger running out of ammunition in a shoot em up movie!  It just doesn’t happen…

I also realized just how bad I had been down when #1 son and I were in the garage and he found a package on my shelf that I had forgotten about.  I have a brand new Tappecue that I had forgotten I had bought!  My son asked if the pneumonia had killed off some brain cells.  That’s just not something one should forget about!

But, I’m now back into the swing of things and have fired up the pit again!  For Independence Day I cooked 2 pork butts, some ABTs, and a peach cobbler. 







I cooked the butts on my homemade electric smoker at 225 for around 18 hours.  The bones came right out of the butts and they almost shredded themselves.  It was really nice to get back into the smoke and enjoy some homemade Q for a change.

Good to see you back. I thought it had been awhile since I've seen any if your fine posts. The peach cobbler looks great. I'm guessing that wasn't done in the smoker

Thanks all!  I've truly missed being around and I've really missed the fruits of my labor.  Hopefully I'll get the sausage making stuff out soon and refill the freezer.  

The cobbler was done in the oven, I tried it once in the smoker and it wasn't as good as I had imagined it would be!

Welcome back, Charlie. I'm glad you're finally feeling like cooking. The PP looked great and I've never met a peach cobbler that I didn't like.

Hello from Union Co., NC. I've had lots of peach cobbler, but never made my own. Yours looks incredible, could you share how to make it? -NCGrillmaster, aka Ray
Ha!  I totally cheat on mine.  I use the bisquick recipe for peach cobbler, but I add 1/4 more peaches and add some all spice as well.  Wish I had an old family recipe for you...
