Can you smoke beef short ribs? They were on sale today and bought a boat load of them. I had the butcher trim them up for me. I have never had them, but heard they were great and need a long cook time to get them like butta.
Thanks Bud. We have a place here called Western Beef. Half Super Market and the other half, meats. The meat section is completely refrigerated and colder than a witches you know what. I buy the big cuts of cow and pig and have them do the initial trimming (it's free, I just tip the guy - he does it with the meat band saw). Most folks buy the individual little cuts - not as good as buying a big chunk (way cheaper) and put them in one of my freezers. Dang, I can't wait until my new SI #3 comes!
One of the better ways to start out with beef short ribs (BSR's) is to use the 3-2-1 method. Three hours direct smoke, 2 hours foiled, last hour back on the smoker out of the foil. This method is designed for running your smoker at 250.
The best BSR's are the untrimmed ones. These actually have meat on them.
