Beef Ribs, Beans and Jalapeno Cornbread on the fire

I've been camping a lot lately. Here's two kinds of beef ribs I did over the fire on one of my trips...

I soaked my pinto and anasazi beans overnight, then started them on the fire while cooking breakfast so they could simmer all day.
(To the beans I added, onion, garlic, thyme, basil, oregano, red pepper flakes, bay leaves and a smoked ham hock. Then salted and peppered after they were tender.)

Then after a few hours I added some beef ribs to the low heat side of the fire...





After the ribs showed some color, I foiled one rack and added onions and beef broth to the package...







Everthing roasted and simmered for a couple of hours...the beans, the foiled ribs and the slow fire roasted ribs...



The foiled ribs when I unwrapped them...




I let the ribs roast more while making a skillet of jalapeno cornbread..
I heated some oil in the skillet, added my batter, then topped the skillet with a lid and hot coals...





Supper...





I tried one of each kind of rib...
They were both tasty. The foiled rib had more pull back from the bone and was fall off the bone tender. The slow roasted rib and more of a fire roasted flavor and tug to the bite. I liked em both..... I'm more of a fire roasted rib girl though. :)

Served with some cucumbers and tomatoes from my garden.

Now THAT is an awesome meal to have while camping, sometimes I don't even know what to say when it comes to your talent and skill of cooking amazing food.

nice looking camp fare you have there!!! certainly a notch above hotdogs and bushes beans!!! i got it figured out with all these great posts from you... you just plain spoiled yourself didnt you!!! lol one a these days i gonna surprise you and show up for supper!!!

Great looking Q Jeanie. I really like your style of pintos, lots of basic flavors going on there. Jalapeno cornbread is the only way to roll in my yard. Excellent meal lady.

You need to get Gene, DINGLE and some others ....bring them to Scott's or Terry's house in Kansas. I'll meet ya there. lol

What ever happened to the Kansas gathering? We need to get one going.

Heard a lot of Anasazi beans, but never had the chance to try them....are they any different tasting? You certainly had an excellent pot going there.

Boy that looks delicious! Does it take a lot of time when cooking over a open fire like that?

Rivet, the anasazi beans are a tiny bit sweeter than a pinto ( I do love pintos) and they cook up faster. I really love them.
I'm like you... Love the fire roasted flavor of the meat.....makes my mouth water smelling it roasting over the fire. The foiled are tasty and tender but I kind of like a bit of tug too.

Eric, I love outdoor cooking. lol

Mark, I put the beans on in the morning when I'm cooking breakfast. Then put the ribs on later. They slow roasted for probably 4 hours or more. Pork ribs usually take about 6 hours.

Bill, aren't beef ribs the best!! Gotta be my favorite thing to slow roast.

Shell, I am still raising shrimp. They should be ready to harvest in the next four weeks. I'm keeping track of the water temperature. The longer I can leave them in the pond, the bigger they will be.

Once again I'm gonna fine out where you are camping and set up camp rite next to you with food like that it's definetly amasing the stuff you come up with. Points for all the ribs look amasing and then the beans slow roasted all day now we have some corn bread to sop up all the fine juices. So another fine job you have there jeanie.
