I'm smoking at 225-235F. I'm doing "5" hour ribs (no foil as an experiment). I have no internal temp in mind.

A note for Jmedic. I did not foil these ribs. They were in the smoker for 5 hours at 225-235. The flavor was fantastic. They were not exactly "chewy", but they did have some bite. I liked them this way. The family would like them to be a little more "falling off the bone tender" so next time I will foil them for about an hour before I glaze them.

Nice Smoke... Great looking Ribs...

The 5 hour Ribs.. Thats how I used to cook my ribs all the time till I started the 3-2-1
 
Ahhh....so those were a rack of beef boned ribs.

Now I see why they looked so nice. I gotta figure our butcher at
Winn Dixie is separating them into packs of 3 individual ribs. I know him
well so will converse with him and see if I can get some racks to try.

What are the crappy or should I say leaner beef racks that I see? Are those a beef spare per se??
 
Could be "short" ribs. These were "center cut back ribs". There were about 7 bones per rack.

Oh Man! Those look yum mee! Nice job, and great q view. I know what ya mean about alot of charcoal today. In Mich, it was in the 40s and windy all day. Used a 20 lb bag of RO lump for a 10 hr smoke!

That q-view collage could be printed in a magazine!
 
Ok, I'm a diehard pork guy when it comes to bbq, but these pics make me want some BEEF! Those things look EXCELLENT! Ya'll are gonna keep on and make me smoke some beef. All these dang briskets and beef ribs just callin' my name in the pics...
