I have been craving beef ribs for the last week, today is my 2nd time doing them. Brushed them with olive oil, seasoned with salt, pepper, garlic powder. Smoked with hickory at 225* doing the 3-2-1 method with apple juice during the foil stage.

 Wish I could get me some beef ribs round here. Everyone cuts them so close to the bone they just scrape them for burger

Man you really got some nice pull back on those and some great color 
 
Never had beef ribs before, what cut do they taste most like?  Also do they stay pretty moist, they looked like they shrunk a lot?  Rookie smoker just asking.
 
Thanks all they were very good! They were not dry at all. They seem to shrink/pull back more than pork ribs I guess because all the fat in them.
