Looks and sounds delicious Brian! I like my sausage browned also. This is on my to do list. Thanks B!
Gumbo is always good. Get yourself a loaf of french bread to go with it! b
Great...thanks for asking brother! Had it full of ribs, tenderloins, bologna and ABTs just last weekend when the in-laws, our sons and their wives were all over (our twin sons' 28th birthday gathering). Mostly I only cook for two, so I don't get it full very often, but its nice to have the space when you need to cook for a crowd.

WOW!  That sounds like one heck of a cook my long time friend.  That smoker of yours is built like a tank. Im sure it handled the occasion well! b

Looks amazing good Brian, even us Yankees up here love a good gumbo!

Thank you sir! I appreciate the kind words. b

I know that tastes as good as it looks because I learned from the same guy. I in fact just finished a bowl of it minuets ago while watching the Minnesota vikings pound Houston 14 Min., zip Houston so far 1st quarter.
Randy,

Looks great, BD!
Points for the step by step Thumbs Up
I'm not crazy about fish, so I've always shied away from Gumbo, but this I could get into!
Dan

I don't make mine much different than you, I like the idea of frying the sausage, I'll do that next time. I only make it once a year so I save my bacon greas all year for the roux. I use Tony C Cajun hot seasoning chicken thighs deboned and skinned and 6 drum sticks for the bones we like okra so I add two pounds of frozen okra toward the end. Here is a picture of mine.

Nice looking Gumbo my friend...... Couldn't ya find a bigger bowl? Oh yeah you can always get seconds at the house......

I wish I could smell it, but all I smell is the burnt wood smell of sawdust, I have contractors flooring here today.

You put that feral hog andouille in it?

Great job. You be ready to tailgate now! There always more gumbo and jambalaya at the game than hamburgers and hotdogs!

Absolutely awesome thread B ! Very nice !

Well howdy friend.

The feral hog sausage is GONE!  And I am out of andouille dust. So this was store bought.

Find a head coach yet? Or will Eddie O get the job? Looks like the Gators took a rain delay.  ...So dem LSU boys should be well healed to romance the Southern Miss.

Lets not discuss Tech.... b

Man could I go for some of that, Looks great, Sorry I'm late, still remodeling.

great post and the step by step.  I like how you added the crucial TWO beers for the stirrer.  I will be trying this one soon.

Great tutorial, but Mrs. gear says I can't do nuthin mo til

we eat up what I already cooked.

Guess some folks around here are going to have some more

smoked good things coming their way.
